Remember there was a hawker on a motorcycle who came to our little hometown decades ago to sell this dish: jyu cheung fan, so named because it resembles pig's intestines. Jyu is pig in Cantonese; cheung is intestine and fan is noodles. The Cantonese dish which resembles thin crépe roll is made from a wide strip of rice noodles and it contains no pork unless you stuff the intestine-like crepe with it. Otherwise, you can use shrimp, beef, vegetables, or other ingredients and then to eat, pour some sauce over it; seasoned soy sauce, hoisin sauce or sesame sauce and in Taiping, the sauce is maroon in colour; sign of a sweet chilli sauce in the concoction.
