This Li Chun

The Winter Olympic Games 2022 kicks off today  in Beijing just as spring begins. It is Li Chun today but I suppose there is no competition on egg balancing; making the eggs stand on their ends, an activity popular during Li Chun. Somewhere I read, on this day, people eat spring pancakes wrapped around fresh vegetables and meat. At the moment, I just yearn for the Empire sushi on the table. These I read, have been adapted to suit the local tastebuds.
