Rich Wives Delicacy

Pulut Tai Tai
, the nyonya kuih made of glutinous rice steamed in coconut milk and coloured blue by bunga telang, I just read was served to the wives of wealthy men in days long gone. The kuih probably is more appropriately called by its other name, pulut tekan as the rice is pressed into its compact form with a wooden frame before being cut into bite size and served with kaya. Tekan is press in Malay. Tai Tai is Chinese and it refers to a rich man’s wife who lives a life of leisure.
